Friday feeling: gratitude and fullness

on

It’s highly unusual for me to write anything on a Friday night but you know what? It’s been a pretty good day, and I wanted to share that with you. With all the doom and gloom happening around the world right now, with earthquakes, fires, mass flooding – I think it’s important to take little moments and be grateful for what we have right in front of us.

Last night was a rough night with the heat inside and hormones. I spent a long time outside begging for rain. We haven’t had much at all this summer. It was supposed to rain all night and all day – but no rain has come. A thunderstorm is on the lookout for later tonight, but I am not holding my breath.

What I am grateful today is for cooler temperatures. The wind has blown away most of the smoke from the BC wildfires. And my condo is cool, which means I can turn off the fans for a change. And maybe get some sleep tonight.

I decided to visit my dad today as restrictions were lifted yesterday. I got to visit him in his room. It was my first time even on his floor, so it was a little confusing to find his room. But I found him in the middle of the lounge area trying to push himself in his wheelchair. I gave him a hug, wheeled him around and helped him back to his room. There we watched bits of the Calgary Stampeded, and chatted.

I held his hand the entire time. Or maybe he held mine. He is surprisingly strong when he wants to be. And squeezed my hand hard. It felt so good just to be in the same room with him without anyone watching us. To be able to hug again. And just be on our own together like we used to. I stayed for almost three hours. Usually he tires out after an hour, but I think he was just happy to have me there.

But I knew he needed sleep before dinner, so I hugged him goodbye. He said I could leave him sitting in his chair. He was going to watch the world through his window and maybe grab a nap. He also had icecream today – so, a good day overall. And he knew who I was today. I’m so grateful for that.

It was a fasting day, so I made dinner around 4:30 and had a nice salad. I just threw a bunch of ingredients together and hoped for the best. I over shopped this week but at least I have enough food to last me a long time – should “SHTF” as everyone is saying. I feel it coming. Maybe I’m watching too much news.

The Salad – as I’m calling it:

  • 2 cups of lettuce – any lettuce
  • 2 cups of bell peppers cut into cubes
  • 2 cups of cucumber cut into small round slices
  • 1 avocado cut into tiny pieces
  • 1.5 cups of imitation or real crab (or chicken works)
  • 1 cup of croutons
  • 2 tablespoons of bacon bits
  • Salad dressing of your choice – I used poppy seed dressing

This was so good. There’s enough for leftovers tomorrow. I mixed everything into a large bowl and don’t even have to dirty anymore dishes. I paired it with a piece of roasted chicken. And I was full. I tried to take a picture but my cell phone just wasn’t having it tonight. Next time. I promise this was good. And just one of many salads I’ve had this week.

I’m day three into my low gluten challenge and am finding it easier than I thought it would be. I’m not giving up my breads completely. I’m just reducing the amount of gluten I eat on a daily basis. I eat 2 or 3 good sized meals each day – or 2 big meals and 1 snack. Anymore than that and I get overly full.

I’m back to tracking my calories daily – because THIS IS WHAT WORKS FOR ME. It works for a lot of people too. I wrote that in bold caps because I’m tired of defending my food choices online. Why should I even have to do that? You do you. I’ll do me. We can choose to live in harmony. It’s that easy.

This salad was only about 400 calories surprisingly. So, I’ll definitely make it again.

The key is eating foods that mostly come out of the ground or from a tree. Fruits (in moderation), and vegetables. For protein this week, I’ve had a combination of roasted chicken, crab, and tuna. It definitely has helped me get out of my food rut.

My cupboards are stocked with nut mixes, roasted peanuts, almonds, and I made my own party mix the other night. I’ve got lots of popcorn which is my favorite thing to munch on – I’ll be making some tonight for movie watching.

So, that’s it in a nutshell. It was a great day. Migraine free. A little tired – I almost fell asleep a few times in my dad’s room. But I’m just so grateful that I was able to visit him. Give him a hug. And come back to a cool condo tonight.

Tomorrow is a big day of house cleaning as I’ve let some things slide. And maybe a walk if it doesn’t rain too much. And no volunteering on Sunday, I have the day off. Yay!

Happy Friday y’all. What are your plans for the weekend?
