Wednesday batch cooking – with asparagus

It’s Wednesday morning or almost noon as I type this out. The sun is shining and even though there’s a chilly breeze right now, it’s supposed to get up to almost 20C today. That’s like summertime weather. I’m sitting here in my plush pj pants, sipping my first cup of coffee and eating my per usual breakfast, a bagel with cream cheese.

But today unlike other days – I stepped on the scale and rejoiced at a nine pound loss since moving in here. It’s really been in the last three weeks that I started pushing myself towards my weight loss goal. I’m determined to do this. More now than ever for health reasons.

Last night I was feeling lazy. On the weekend, I ordered in groceries and stocked up on vegetables. I have a whole container of lettuce that I don’t know what to do with. So, I grabbed a can of tuna and made a salad. It was delicious.

It may have been one of the most delicious salads I’ve had in years. I paired it with some carrots, French bread and Spinach dip. Why? Because with clean eating, I’m having a difficult time making my daily calorie goals of 1000-1200. The bread also helps fill me up – but I only eat it once a day. And plus, bread is just amazing and delicious.

Ingredients

  • 2 cups of iceberg lettuce
  • 1 cup of cottage cheese
  • 1/2 cup of celery
  • 1/2 cup of spring onions
  • salt, pepper, parsley

I have some asparagus I need to use up tonight. I can’t decide what to make. At some point this week, I want to make tacos so I can use some of the lettuce. But what goes with asparagus?

I don’t have any fish in the freezer – or do I? Normally I would pair it with some grilled salmon. Maybe I’ll have to order in a small order this afternoon or walk over to the No Frills across the street.

It’s too warm for soup. I usually have soup on chilly snowy days. But cream of asparagus soup is one of my all time favorite soups. It’s what my mom used to make. So I think of her.

I can do it without the crust to make it lower carb. I forgot about this one – doesn’t it look amazing?

I didn’t make it to the dollar store the other day. I’m thinking I’ll walk over later this evening when traffic is quieter. I’ve noticed that while traffic is high during the day, it tapers off around 8 pm at night. Once the stores close across the street, it’s actually very quiet here.

Last night, I decided to head to bed around 1 am and stopped by my spare room. I have a pretty good view of the western sky but there is too much light from the strip mall to see the stars. I’m disappointed in this. But I can’t complain. Something down on the ground caught my eye. The way it was moving, I thought it was an animal at first. It was dark and I couldn’t see it clearly. I followed it for a good 15 minutes before deciding…

It was a fucking garbage bag. A plastic grocery bag. But the way it moved, it was almost hypnotic. I zoned out for a good ten minutes while watching it.

I also started a new youtube channel last night called “calming continuum”. I’ve wanted to record long playing music for a very long time (heh). So, I’m going to work on ambient tracks mixed with nature sounds. These are insanely popular on youtube. And I’m trying to generate as many streams of revenue as possible.
