I always start the pasta first since it takes about 8-10 minutes for pasta to cook. Using a large pot boil about 2 cups of water and dump in the pasta. I used about a handful of linguini noodles and tore them in half.
In a frying pan, drop in the green onions, some olive oil and minced garlic. Let simmer on medium low heat until onions are tender.
Add in the grape tomatoes (sliced in half), mushrooms and add a bit of seasoning. Let cook for a few minutes.
Add in the kale last as it doesn’t take long to cook. You may want to prewash the kale the night before to let it dry out. I also remove the stems when cooking with kale. Cook for a couple of minutes and give it a stir with a wooden spoon.
Next comes the creamy pasta sauce. You can make your own or use store bought jars. Stir in with the vegetables, turn to medium heat and bring to a boil.
Reduce heat and let simmer stirring occasionally. When the pasta is cooked, drain it and toss the pasta into the frying pan. Mix well.
Top off with some fresh parsley and basil. Or shred some of your favorite cheese for added punch!
