Creamy Kale Linguini

To celebrate the end of my first week in my new home, I wanted to “break” the kitchen in with a good home cooked meal. Up until today, I had been relying on sandwiches, soups and frozen pizza while I unpacked and organized.

Everything is pretty much organized now and so I ordered in groceries the other day.

I spent quite a bit of time washing vegetables today with my new “sprinkler hose” faucet. I haven’t had one of these in years. I massaged the kale, and pre-prepped the tomatoes and mushrooms like I used to do.

I love my new kitchen. Love. Love. Love it. Everything actually works and is very clean.

What You’ll Need

My sister had dropped off a few bags of groceries for me earlier this week with lots of pasta. So it was a no brainer what to make for dinner. Here’s what I used.

  • 2 cups of linguini noodles
  • 1 cup of green onions
  • 2 cups of grape tomatoes
  • 2 cups of mushrooms
  • 1/2 jar of creamy garlic pasta sauce
  • 1/2 teaspoon of minced garlic
  • 2 teaspoons of olive oil
  • spices: salt, pepper, parsley

Preparation

I always start the pasta first since it takes about 8-10 minutes for pasta to cook. Using a large pot boil about 2 cups of water and dump in the pasta. I used about a handful of linguini noodles and tore them in half.

In a frying pan, drop in the green onions, some olive oil and minced garlic. Let simmer on medium low heat until onions are tender.

Add in the grape tomatoes (sliced in half), mushrooms and add a bit of seasoning. Let cook for a few minutes.

Add in the kale last as it doesn’t take long to cook. You may want to prewash the kale the night before to let it dry out. I also remove the stems when cooking with kale. Cook for a couple of minutes and give it a stir with a wooden spoon.

Next comes the creamy pasta sauce. You can make your own or use store bought jars. Stir in with the vegetables, turn to medium heat and bring to a boil. 

Reduce heat and let simmer stirring occasionally. When the pasta is cooked, drain it and toss the pasta into the frying pan. Mix well. 

Top off with some fresh parsley and basil. Or shred some of your favorite cheese for added punch!

Pasta is so easy to work with. It might not be all that healthy for those looking to lose weight, but if you want a cheat meal – then this is for you.

This recipe will serve up to two people or you can have leftovers for the next day.
