Sunday problems – baking disasters

Last night I got the brilliant idea of baking something at 9:00 pm at night. I was craving chocolate cake of all things. I looked online for a bit to find some easy recipes. But you know, most of the recipes are all the same after awhile. People just word it a bit differently, or claim to have added some brilliant ingredient that makes it totally “their own”. And it’s usually some obscure ingredient no one ever has in their kitchen at any given time.

When I post my recipes, I don’t claim to do anything like this. I’m not a professional chef or baker by any means. It’s just a hobby for me. I enjoy sharing tips and recipes with others. Usually, I’ll use a basic recipe and then give it a twist or add something different. And this is exactly what I did last night with a basic cake recipe. I added some hot coffee to the cake batter.

But you know, things don’t always work out as planned. I don’t know if I cooked the cupcakes too long, or if there was too much flour – or not enough milk. I think butter is key for most recipes instead of using oil. Perhaps that is where it went wrong. The batter on its own was delicious. But the cupcakes were disappointing and dry.

According to some instagram friends, they still look tasty.

Chocolate Coffee Cupcakes

I think next time, I’ll add dark chocolate instead of cocoa. One thing I’ve learned that’s really fun to do is melting some butter and chocolate together. Then you add a touch of flour and cream to thicken up the sauce. It’s so tasty. I’ll do that next time with this recipe.

They must have tasted all right though because I ate FOUR of these. FOUR of them. So today, is most definitely a fasting kind of day without bread. Good thing I worked it off with an hour on the bike.

Anyway, there’s no point to my post today. I’m actually showered, dressed and did my music thing this morning. It could be the last volunteer gig for a while with COVID restrictions which means a few weeks of solitary confinement at home.

Isolation is starting to feel more and more like prison. My hips are starting to feel the effect from not moving around as much during the day. So I really need to make an effort of going outside at least once daily for some sun and fresh air.

And on that note, there are some cupcakes calling my name. Help. I have a problem.

I’ve been craving some eggnog and our stores don’t have any yet. I’ve been looking up how to make eggnog from scratch. So, that might be a task for this afternoon. I’ll let you know how it goes. I’m feeling like eggnog and rum, or two, or three – to go with my cupcakes.
