Comfort food: Creamy Asparagus Soup and Grilled Cheese Sandwiches

I’m feeling a little sick to the stomach after the emotional turmoil we faced saying goodbye to the house. I’m also really missing my mum more than ever. Especially with Thanksgiving coming up this weekend and our family is not allowed to get together to celebrate.

COVID cases are on the rise here and the government has asked that people not gather outside their immediate family – or family that they live with. As someone who is single and lives on her own, this is really hard for me. Luckily, I can see my dad on Saturday for a visit. So, that’s something. Maybe I’ll sneak in some homemade treats for him to enjoy. And yes, we have to wear masks.

So, in honour of my mum, I’m going to make one of her favorite things to serve at family dinners – cream of asparagus soup with fresh asparagus on the side. And I will pair that off with a nice grilled cheese sandwich with two different kinds of cheese. It is as delicious as it sounds.

I’m cheating tonight with a dry mix package from the store, but you can make the soup on your own from scratch.

I spent hours as a kid watching mum in the kitchen. I still remember her green and black polka dot dress and black high heel shoes (she was short) as she leaned over the tall white stock pot to stir the soup.

Grilled Cheese Sandwiches
