Here we are at Friday morning already and I haven’t done anything I said I would get to this week. I did do a load of laundry yesterday though – today it’s bedding washing kind of a day. I’ve been wanting to get into the kitchen and do some batch baking but I just haven’t had the energy this week.
But it’s a beautiful sunny day. The air is crisp. So many leaves have fallen to the ground and I’m dying to get in the kitchen and whip up some scones – handmade, muffins and all the glorious things that come with fall baking.
That’s the plan – at least I hope so. I was going to try my hand at a creamy cheesecake recipe but I ate all the cream cheese with my delicious bagels this week! Oops. This recipe looks delicious.
Meatloaf and Potatoes – comfort food
I’m still debating on what to cook for tonight. I have some ground beef thawing in the fridge. It may either be a chili tonight of night or meatloaf. There’s nothing finer than eating a plateful of homemade meatloaf, with a side of mashed potatoes and steamed vegetables.
Meatloaf is one of those staple dishes that everyone can make. You basically throw everything into one bowl and mix well. The recipes are so versatile and there are so many ways you can make it. I think tonight I will throw in my left over spinach.
I still have a couple of zucchinis that I need to use up as well. I’m thinking of baking some delicious zucchini muffins or a zucchini-cheese loaf. That does sound delicious and it looks great too. It’s another simple recipe where you throw all the ingredients into one bowl. Of course, I ate all my cheese last night so – I guess I have to order in groceries this afternoon.
The other great thing you can do with zucchinis is a nice lasagna or casserole. Dishes that normally require some kind of pasta, but you would use the zucchini as noodles instead. Like this great idea from Laura Vitale.
Or I might be really lazy and try something like this zucchini fritters recipes from Downshiftology. I think I even have all the ingredients. This looks amazing and delicious. Bonus points for being low-carb and keto friendly.
And lastly, my favorite recipe for zucchinis is the basic zucchini muffin. A healthy and tasty treat that takes less than a half an hour to make.
But knowing me, I’ll probably just sit at the computer drooling over recipes all afternoon for “meal planning” and then will finish off the day and order in dinner. Isn’t that typical? I am a procrastinator through and through.
On the upside, I joined a local movie club and we are all watching a movie on Netflix together (virtually) tonight. It sounds like fun. Although it’s not my kind of movie. Maybe I can lie and watch something else? Do you think anyone would notice?
