I was feeling super lazy but wanted to be healthy. This is a one pot meal and can be prepped in less than 30 minutes. If you pre-wash and pre-cut your vegetables when you bring them home from the store – then prep will take just a few minutes.
This recipe is great for chilly fall days – like today – plus six in the morning! Brr! What’s great about casseroles is that they are so versatile and you can easily substitute these ingredients for your favorite vegetables and sauces.
All vegetables should be washed and cut into slices – see pictures for reference.
Preheat the oven to 350 degrees while you prepare the dish. You will need a good sized casserole dish for this one!
- 2 cups of mushrooms
- 1.5 cups of broccoli
- 1.5 cups of cauliflower
- 1 cup of zucchini (or a whole small zucchini)
- 1 can of Campbells creamy soup (potato, broccoli, or mushroom)
- 1/4 cup of milk or cream (or sour cream)
- 1 tbsp of breadcrumbs or crackers (optional – 1 package of stuffing mix)
- 1 cup of cheese (your favorite flavour – I used Marble)
- Seasoning: salt, pepper – that’s all you need!
- Grease a baking dish with oil or Pam spray (I use coconut oil spray)
- Dump in all the vegetables
- Add seasoning
- Add can of soup and mix well
- Add milk or cream to help thick up the sauce (optional)
- Add in more seasoning as desired – your choice!
- Top off with breadcrumbs or crackers (or stir in stuffing mix)
- Cook in oven on middle rack at 350 (preheated) for about 30-40 minutes
- Take out of the oven, top off with cheese – cook for an additional 5-10 minutes or until cheese has melted – you can also broil for five minutes.
These casseroles are low calorie and perfect for cold winter or fall days. You can add in eggs or chicken for protein. I’m sure even tuna would taste amazing. The sky is the limit when it comes to casseroles.

Note: you could probably do this in the instant pot – cooking times will vary. I just love oven roasted vegetables. It’s comfort food.
Update: this turned out to be really delicious but a bit runny. If you add in a whole package of stuffing mix or crackers – this should soak up some of the water from the zucchini.
