What’s Cooking: Lazy Omelette

Eggs for dinner on a Friday night? Absolutely.

I was flipping through Skip the Dishes on my phone when my fingers lingered over the Denny’s logo. I was hemming and hawing over whether I should order in a Lumberjack meal or have an omelette.

I realized what a waste of money that would be when I have all the ingredients for an omelette in my fridge.

This was unexpectedly filling. If you serve with a side of fruit or toast, this recipe could easily feed two people.


Ingredients

  • 3 large eggs
  • 1 cup of sliced grape tomatoes
  • 1 cup of zucchini
  • 1.5 cups of summer sausage
  • 1.5 cups of spinach
  • 1 cup of white or green onions – diced
  • 1 cup of Gouda cheese
  • Olive oil or vegetable oil
  • Spices: salt, pepper, garlic, basil

Preparation

  • Using a skillet, heat up some olive oil or vegetable oil on medium heat.
  • Add in the onions and sausage and cook until sausage turns slightly brown. Add your choice of spices in this step.
  • Add in tomatoes, zucchini and spinach. Let cook 2-3 minutes.
  • Using a separate bowl, crack the eggs and beat with a whisk. You can add some milk but it isn’t necessary.
  • Add the egg mixture to the skillet and mix with a wooden spoon.
  • In the pictures below, you can see that I left the eggs on the bottom resulting in a “lazy half omelette”.
  • Cook until the egg mixture is fully cooked or lightly brown.
  • Top off with shredded Gouda cheese. Add more spices if desired – I topped this off with basil and a bit of garlic salt.
  • Optional: serve with toast or a bowl of fruit.
