Okay, so I know I’ve posted quite a bit today – more than usual. But when inspiration strikes – you don’t fight it. You go with it. I have a few announcements for my dedicated readers. I’m enjoying getting to know you all.
Website revamp – let me know what you think of the new layout!
I’ve revamped this entire website. A lot has changed in my life since starting this website at the end of March. Can you believe it? It feels like it was so long ago. I love the style and feel of this new layout. And I think it looks clean and professional. What do you think?
Life has taken a complete turn since I started this blog. And in many good ways. For one – I’m working part-time for the summer and have more time to devote to writing, cooking, and healthy living. I first started this blog to help with health and migraines. I can count the migraines I’ve had on one hand in the past two months. And that’s such a difference from April when I was sick for three weeks with a migraine! Three weeks! I was in my doctor’s office CRYING because of the pain and took time off work to deal with it.
The part-time hours are helping so much that I’ve been able to make major lifestyle changes in just a few weeks. And the benefits are really starting to show.
Fitness Challenge & Tips
I’ve dropped some weight as part of my fitness challenge. Not a lot. But enough that my clothes are fitting better and I have more energy. I completely turned around my sleeping schedule. No longer do I sleep in until noon on weekends. I’m usually up by seven am at the latest so I can take my time and just enjoy the quiet. Getting to bed early is still a challenge – it’s almost one am as I write this. Oy. But I’m getting there.
I never used to be a morning person but I think I’m becoming addicted to it. The kids are all still sleeping in the neighbourhood and the world is peaceful.
I’ll still share some tips for fitness – but cooking and diet is a huge part of being healthy and losing weight. I’ll be focusing more on that part of things and sharing my healthy recipes with you.
Did you notice my name change?
I said to heck with it and am using my real last name. It’s so common like Smith, I don’t think I will have any issues. Plus – I’ve changed my focus on what I’ll be writing about.
My interests were too varied and too hard to keep track of. So for now – I will be focusing on food, learning to cook, travel & general health. Work is a bit slow right now and training has stopped due to budget cuts. Unfortunately, I won’t be able to share much more information with you on that front. Maybe I will do some research into the history of Indigenous cooking and traditions.
Music is no longer a part of my life – I’m officially retired from it.
I’m taking more time for myself on the weekends to enjoy and travel and experience new things. Cooking has become a big part of my life and I find all I can think about it what recipe to try next. The passion I lost for music, has been renewed in the joy of cooking. And I’m so excited to share my journey with you. As for music – I still have a love for it – but not as a performer. I have hung my hat up on the performance side of things. I take the odd wedding or funeral and volunteer twice a month. But that’s it. I do plan on going to a few concerts this year – because I’m still a fan of music. I’ve put thousands of dollars into music with very little return. And I was pretty broken up about it. Still am really. But – onto bigger and better things.
Organic Farming – I’d love to reconnect with other chefs and especially organic farmers around the province. I would absolutely be thrilled to visit organic farms and learn from local chefs. I’m really interested in the history of food and how cooking came to be. I’m diving into as much history, and cultural lessons as I can.
Alberta farmers – I’m looking at you. I come from a long history of Danish farmers and want to learn as much as I can about organic farming. I feel like it was always a calling of mine. I’m starting to really hate the city life and long for a life in the country.
Cooking Lessons – Aspiring Chef
Everything I’m learning is from online sources right now – but I hope that I can find local chefs to train with and learn from. This is what pushed me to use my real name. “Jen” is nickname – something kids in school used to call me because of my last name. Jensen is my last name. I don’t have a middle name to use as a writer – so – Jen, it is.
Anyway, I don’t want to write too much as I should get to bed. But I just wanted to share this information with you and to let you know I’ve changed my profile. I’ve also changed my profiles on Instagram & Twitter – but if you look me up under mostlysingle or jenwjensen – you should be able to find me.
