Happy Friday – Food Goals

This week flew by. I can’t believe it’s already Friday night. It’s 10:30 pm and I’m yawning – ready for bed early. I think it’s the weather mostly. It’s been very dark, cold and we’ve had enough rain to last us the summer. I’m not complaining though.

I love the rain. There’s nothing better than waking up in the morning after it’s rained all night. The smell of dew on the grass in the morning is one of my most favorite things in this world.

I think possibly because this weather reminds me of weekends spent in the mountains. I miss the mountains. They’re glorious. Majestic. And the one place I feel connected to everything that is whole.

First of all, I must apologize for not writing much this week. I spent a lot of time in the kitchen. I was so pleased with the way my meals turned out. I tried three new healthy dishes and they all turned out pretty fabulous. I just placed another order for groceries that will be picked up tomorrow.

Next week – I’ll be focusing on mostly vegetable dishes. I’ve stocked up on mushrooms, zucchinis, and replaced all the baking ingredients that unfortunately, went bad from lack of use. I really want to experiment more with healthy baking.

Fall is my favorite time of year for cooking with vegetables. Zucchinis, eggplants and squash are in season. Nothing beats the smell of a freshly basked zucchini casserole. I can’t wait to make this recipe here. I made this last year – and it was so good. But now I have so many different spices and oils to experiment with. I can’t wait to start cooking tomorrow.

A high protein and fibre diet – makes the stomach very happy

I’ve really enjoyed baking snacks like protein balls, oatmeal cookies, and bran muffins. Things that are really packed with protein and fibre and wonderful for the digestive system.

A diet rich in fibre helps to naturally clean out your system. Forget the expensive supplements or gimmicky products. Add more natural fibres to your diet, and you will notice a difference in a matter of a few days.

I whipped up this batch of oatmeal and peanut butter cookies last year. They were delicious and packed with protein. Throw in some bananas and honey for even more flavour.

I have a ton of berries left over – raspberries, strawberries and blueberries. So, I need to come up with creative ideas this weekend to use them before they go rotten. But what to make? Crumbles? That’s not very healthy. I’ve been snacking on the berries all week and while they are delicious – you can get pretty bored of them fast. Maybe freezing them is an the best thing to do.

Or maybe I should bake another banana loaf and throw in some berries and cover it in low fat yogurt like I did in this picture. This was as delicious as it looks.

My mouth is watering just looking at all these pictures. I was pretty proud of myself having stuck to my fitness goals. I focused on spending time in the kitchen. Finally, I think I’m out of that boring food rut I’ve been stuck in for the last year. My tastebuds were pleasantly surprised with the way my Tao Egg Noodle Stir Fry turned out.

I think I’ll stop there. If I keep writing about food, my stomach will start growling and I’ll want to eat all the food that is bad for me. So, on that note.
